Korean Ground Beef Bowl

You won’t believe how easy it is to prepare an authentic Korean Ground Beef Bowl that tastes just like your favorite restaurant. The Bibimbap or Bi Bim Bap is a traditional Korean meal that offers a lot of variety, mixing different ingredients on top of a bowl of warm white rice, with a soy, doenjang, namul or gochujang sauce.

This recipe from Fox and Briar adds a soft fried egg sunny side up, as the ultimate topping to the beef and sticky rice. If you want to increase the protein component, you can substitute quinoa instead, which has only 34 net grams (after fiber) compared to white rice, which has 43 carbohydrates in a measured cup with no fiber.

Unstuffed Pepper Bowl

She suggests using tamari, which is a Japanese alternative to soy sauce (with less sodium). Small diced sweet yellow and red peppers are sautéed with the beef to soften them (and make them easier to digest), and the bowl is garnished with fresh cilantro and a delicious spoonful of sour cream.

Beef and Plantain Skillet with Lemon Basil Aioli

When we saw this ground-beef recipe we thought: “now that is different and interesting!” Diced green plantains are sautéed until golden brown in a skillet (or frying pan), and then set aside. The ground beef is cooked with some fresh diced tomatoes and green onions, and then the plantains are added in at the end and garnished with an AMAZING (trust us) mayonnaise, fresh basil, lemon juice and garlic aioli.

No rice is used for this beef bowl recipe, because the plantains replace that starch component in the dish. Plantains have more fiber than rice (2g compared to less than 1 gram per cup), and they are packed with healthy vitamins like Potassium, Magnesium, Vitamins A + K and other essential nutrients.
